Hi ya’ll, I know, I know, you’re like, she’s just posting about Easter now? Well, yes, & better late than never right? Truth is, I came down with a nasty stomach bug Easter evening & have not been able to eat since then, let alone look at pictures or write about food! I’m feeling much better now & thought I’d better get to sharing! So it went a little something like this…my Mom & I made a delicious brunch spread, all vegan of course, that included:
- Curried Tofu Scramble with Cremini Mushrooms & Wilted Arugula (adapted from Appetite for Reduction)
- Cheesy Potato & Sausage Bake (from The Skinny Bitch Cookbook)
- Lemony Roasted Asparagus
- Cinnamon Rolls (from Trader Joes! They don’t specifically say “vegan” but they are!)
- Smoky Maple Tempeh Bacon
