My Mom & I decided to try out a new Christmas Eve tradition this year = Vegetarian Tamale Making!
I saw a recipe for “Red Pepper Tamales” a few months ago in Vegetarian Times & thought It sounded like a lot of fun. It is A LOT of work, so fortunately we were able to pick up some pre-made vegetarian masa from a local Mexican food restaurant. After a few glasses of wine, & some trial & error, we enjoyed ourselves.
***We left out the feta. Make vegan with Follow Your Heart Cheddar Alternative & Vegan Sour Cream!
We’ll be steaming them up tomorrow for Christmas dinner, & I’ll let you know how they turn out!
