“Sweet Dumpling Squash Stuffed with Lemon-Herb Rice”
I have more sweet dumpling squash than I know what to do with! The CSA keeps loading me up, so I guess it’s a good thing they keep for a while!
With all the heavy cheese dishes I ate at the wine bar last night, I was craving something on the lighter side. I also have an abundance of fresh herbs on hand, so I was excited to see this recipe on Fat Free Vegan, one of my favorite blogs!
I love the sweetness of the roasted squash with the bright & lemony rice. The fresh parsley, sage, rosemary & thyme (ha, ha!) pack a lot of flavor!
