Leftovers….

I was certainly sent home with my share! You won’t find any turkey & gravy here, but loads of veggies, stuffing, sweet potatoes & vegan pumpkin cheesecake for sure!!! I also returned home fridge stocked full of fresh CSA goodies so I decided to try to creatively make use of both! 

For Thanksgiving, my Mom made the “Skinny Stuffing” from the Skinny Bitch Ultimate Everyday Cookbook & added dried apricots & figs to make it more festive! It was super yummy & I decided to stuff some fresh from the CSA “8 ball squash” with the leftovers….

Eight Ball Squash Stuffed with Leftover Skinny Stuffing

I reheated the stuffing, cut the tops of of 2 eight ball squash, scooped out the filling, steamed them for 8 minutes, stuffed them with the stuffing, & baked at 400 degrees for 20 minutes!
