Carrot, Dill & White Bean Salad

I received a beautiful, colorful bunch of young carrots in my last CSA share. I usually shred them on daily salad, but wanted to try something a bit different…

I also had a bunch of fresh dill & found this fantastic recipe from the gorgeous Heidi Swanson of 101 Cookbooks. She is fabulous & recipes are always amazing! I cannot wait for her new cookbook! I cooked great northern beans from scratch, instead of white alubia, as I could not find them. 

“Carrot, Dill & White Bean Salad”

This salad had such lovely flavors! I loved the sweetness of the cooked carrots with the creamy beans. The fresh dill & lemon-shallot dressing really brightened the dish, while the toasted almonds gave it a nice crunch!
