Spinach, Fig & Fennel Salad with Cumin-Dijon Vinaigrette

I absolutely adore figs & wait all year for them to come into season so I can put them on everything from salads to oatmeal, pizza, Soyogurt, vegan ice cream, etc…

I needed a fall salad to accompany the Sage & Butternut Squash Risotto I made a few nights ago with my good buddy Paul. I found this recipe is in the new VegNews Holiday eCookbook & I wanted to test it out as a possible Thanksgiving salad. I knew I would love it, but wasn’t sure if the fig & fennel would go over well with Paul. You know, guys can be kinda picky! To my surprise, he really liked it! Guess it’s a keeper!

    If you are not a fan of figs, the original recipe calls for mandarin orange segments. You can also opt for raisins or dates!
