Summer Squash & Applesauce Muffins
My CSA still seems to have a surplus of summer squash & the shareholders are on the receiving end!
Don’t get me wrong - I love summer squash, I’ve just had so much of it lately! I’ve roasted it, steamed it, stir-fried it, etc. I was looking for some inspiration & realized I’d never thought to bake with it! I make zucchini bread all the time, why not use summer squash?
I found this recipe on Urban Vegan, & adapted it a bit by adding chopped dates & a cup of soy milk to the batter (it seemed too dry & doughy). They turned out perfectly moist, with just the right amount of sweetness. So good with my morning almond milk latte!
