Ratatouille!
I picked up a bountiful box of veggies today from my CSA, & I am so happy to have a “fridge full of freshness” again!
I’ve been working non-stop & anticipate some long days ahead. Even though I love to cook, I know I won’t even want to think about spending time in the kitchen after being on my feet all day. So, I wanted to make sure to have something healthy & versatile waiting for me at home…

“Raging Ratatouille”
Just a few days ago, PETA’s “Recipe of the Week” arrived in my inbox & it just so happened to be a recipe for “Raging Ratatouille.” I love ratatouille! I had gorgeous heirloom tomatoes, peppers, zucchini & eggplant on hand, so I thought this would be the perfect thing to cook up tonight to sustain me through the weekend, as I can eat it as is, or serve it over pasta or rice, or with a chunk of crusty French bread!
Evenings around here are starting to get a bit chilly, & this dish was so comforting with a nice glass of dry Chianti!
***Oh, & P.S…when a recipe calls for “tomato paste,” this is the only way to go…
