Quiona Stuffed Sweet Dumpling Squash
I received some beautiful sweet dumpling squash in last week’s CSA & went in search of a fun fall recipe so I could cook them up! I found this great recipe on Apartment Therapy: The Kitchn & enlisted the help of my Mom, who is a fabulous cook!

Quiona Stuffed Sweet Dumpling Squash
This was so yummy! I decided to substitute red quiona thinking the color would be prettier, & it was! We loved the combination of the sweet medjool dates & warm cinnamon that flavored the quiona. The pistachios added a nice texture & crunch, & little zest of lemon always adds a nice burst of freshness! This would be an elegant meatless main dish for Thanksgiving!
To accompany the squash, my Mom made this lovely salad…

Greens, Roasted Asparagus, Pear & Dijon Vinaigrette
Of course, we washed it down with a little Kendall Jackson Chardonnay, one of my favorite vegan wines…

We were also celebrating the 8th birthday of my Mom’s Lab, “Beatrice.” Yes, we are the kind of family that celebrates dog birthdays….
