Teriyaki Tofu with a Side of Guilt…
I should be loving this…

& I am. But I’m not. Loving it because it is amazing. Guilty because this was the meal my sweet Mom was supposed be be enjoying last night, before having a bit of a health scare & ending up in the hospital, where she will be resting up for a few days…eating hospital food. Ick.
We were together most of the day yesterday & she kept going on about the “Teriyaki Tofu” from Peas & Thank You that had been marinating all afternoon, excited to go home & make it for dinner. Well…that ended up being my dinner tonight, as I keep watch over her home & her doggies, who miss her so much.

Teriyaki Tofu, Steamed Broccoli & Carrots, Brown Rice
I enjoyed it as she planned to, & just like Mama Pea suggested, simply…with steamed veggies & brown rice. The tofu was the star, marinated in soy sauce, mirin, garlic, ginger & brown sugar & heated under the broiler. Delicious. Guilty, but I left plenty of leftovers.
She is fine, thankfully, but scares like these jolt things into perspective. Don’t go to bed mad, always tell your loved ones that you love them - no matter how much they annoy you, count your blessings, eat your veggies, & live each day to the fullest. These moments are fleeting.
