Curried Red Lentil & Butternut Squash Stew

As I walked home from yoga this evening, I felt the crisp fall air returning. Thank goodness. I’ve had enough of that Indian summer business & I hope the cooler temperatures stick around. I am craving the comforts of fall - scarves, boots, almond milk pumpkin spice lattes & hearty squash dishes like this one from Oh She Glows, another one of my most favorite blogs! Her photos & recipes are some of the best in the blog-o-sphere.

As I said a few days ago, I can’t get enough of curried dishes. Curry powder & a hint of ginger are the main spices here, adding a subtle warmth & heat to the sweetly tender butternut squash. The red lentils are quick cooking, making this dish a quick & easy weeknight meal. Hot of the stove, this dish will practically melt in your mouth.

Eventually, I will have gained enough practice & expertise to begin writing more of my own recipes, but until then I am grateful to have such a talented community of bloggers to emulate & admire. I’ve been salivating over Angela’s pumpkin & squash recipes & hope to make this sometime soon.
