Summer Vegetable Ragout

Fall is upon us & I couldn’t be happier! I adore the fall season & am excited for a new crop of veggies. But until they’re ripe & ready, the CSA has been loading us up with the last of summer’s finest - fresh basil, summer squash, eggplant & green beans!

Inspired by this recipe from Epicurious, I put together a lovely dish that utilized many items from my latest share…

“Summer Vegetable Ragout with Curry Sauce over Whole Wheat Couscous”

I must admit that out of laziness, I used a pre-made Trader Joe’s “Curry Simmer Sauce” & frozen sweet corn kernels. Hey, I’m back to being a full-time working girl, so I’ve gotta cut corners where I can! Regardless of my cheats, the end result was a wonderful, flavorful, & hearty end-of-summer dish!
