So a blogger that I follow, Vegenista, ( she rocks everybody- follow her!) asked us about a possible appetizer for tonight …well, due to circumstances beyond control we could not post a recipe right away and felt really bad…so vegenista, this one is especially for you!
Use a cracker or make your own and start to top:
- 1 cups white beans
- 1 cup vegan cream cheese
- 2 tsp Italian seasoning
- 1 shallot- saute in 1 tsp truffle oil, mince and add
- 2 tsp grated ginger
- Puree together. Put a tsp on the cracker.
- Next add some black olive and pumpkin seeds
- The final touch is a few red currants.
Enjoy. Makes a heep.
