Mango Coconut “Celebration” Cupcakes!
Just when I was starting to fear that all hope was lost in regards to my education career, I got an email last week inviting me to a job interview. That interview happened yesterday & just a few hours later I got the fate changing phone call & was offered the job! This comes after a devastating layoff from a school I loved, then a job that didn’t work out as expected, then a frustrating year of interviews that lead nowhere, & eventually going back to an unfulfilling job in an industry I’d worked so hard to get out of. The search is over & a new chapter begins. Finally.
I was up at my Mom’s at the time of that fateful call & we were already in the process of making these, which quickly became “celebration cupcakes!” If only I’d brought some champagne!
Mango Cupcakes with Coconut Cream Icing a la Peas & Thank You
My Mom bought the Peas & Thank You cookbook after hearing the buzz about it around Vida Vegan Con. “Mama Pea” was in attendance, & although I didn’t meet her, her presence was hard to ignore, as she is ridiculously tall & stunningly gorgeous! This cookbook is absolutely charming - filled with darling photos of her family, delightful stories & sweet anecdotes about days in the lives of the Family Pea & abundant with mouth watering recipes for both youngsters & the young at heart.
These tantalizing tropical treats are made with wholesome whole wheat pastry flour, coconut milk, soy milk, vanilla & coconut extracts, orange juice & juicy chunks of mango…
Earthy B, confectioners sugar, coconut milk, & coconut extract are combined & whipped into a luscious buttery icing…
Fragrant flakes of coconut are toasted for a crunchy cupcake topping…
In 20-25 minutes they’re ready…
The cupcakes have a flavor & texture reminiscent of the BabycakesNYC cupcakes I crave so often. Not sickly sweet, but sweet enough, with the slightest hint of coconut & the occasional surprise of a melting mango morsel!
Who could say no to the oozy-gooey coconut icing? Certainly not me! These blissful cupcakes will transport you to tropical paradise with just one bite!
