Peanut Butter & Berry Smoothie
While on this “mostly raw” experiment, I’ve been starting my days with a frosty almond milk & fruit smoothie. I just haven’t quite been able go the route of green juice…not yet anyway, so I’ve just been tossing almond milk, banana, & frozen fruit in the blender.

"Roasted Beets & Turnips with Balsamic Glaze"
I’ve been eating totally vegan & mostly raw for the last few days. I have to say I am loving it! I start my day with a raw fruit, hemp protein, & almond milk smoothie, then eat a beautiful raw salad for lunch, & for dinner some lightly steamed veggies & protein (tofu or Gardein). I feel amazing & my skin continues to be clear & aglow!

I came across this recipe just as I received a huge napa cabbage & large bunch of dill from the CSA. I’ve also been bombarded with and endless supply of carrots, so this covered all bases!

I’m not so much for making “resolutions.” I find I break them too easily. Instead, I’m all about setting “intentions.” Resolutions focus on change, while intentions are your vision for the future. It is not about making instant change, but rather about making a commitment to focus your energy on what it is you want to attract & be.

My new “New Year’s Day” tradition…
Champagne & Paella! I began this tradition last year & it was a hit. I love this recipe from the “Urban Vegan” & will make it over & over. This is popular with meat eaters, veggies & vegans alike! So flavorful! I love anything flavored with saffron & soyrizo rocks my friggin’ world!
