Vegan Strawberry "Tallcakes"

Mediterranean Arugula Panzanella
I received another bag of beautiful arugula from the CSA & had seen a recipe in Vegetarian Times for an “Arugula Panzanella.” I love Italian-style bread salads & peppery arugula, so I threw it together for lunch today. I decided to kick it up a notch & use a rustic kalamata olive loaf. It was very yummy.

Yay! Tomorrow is my pick up day! I am so excited that I can now pick up from the Adams Ave Farmer’s Market in my neighborhood! Lot’s of greens this week, which is good! I’m leaving for Costa Rica in a month, & that means I need to do some detoxing & very healthy eating if I want to feel comfortable in a bathing suit! Ack!
