Farm Fresh Roasted Carrots & Beets
I received some beautiful carrots (red, orange & yellow varieties) & red beets in my latest CSA box. I adore roasted veggies, but have never had roasted beets! I found this great recipe from the darling Mr. Jamie Oliver & modified it a bit. The veggies were sweet, tender & caramelized from their own natural sugars & glaze of orange juice, olive oil & balsamic vinegar. I...

"T.G.I. CSA-day!!!!"
Look at the size of those beets & radishes! I have never seen carrots so colorful! It’s times like this that I long for a “big-girl camera” & some photography skills!
Once again, I am beyond delighted with the gorgeous contents of my CSA box! I haven’t a clue what I am going to make with most of this goodness yet, but I did find a great kale & beet greens...

Farm Fresh Sugar Snap Pea & Mint Salad
I have officially used everything from my lovely CSA box! It is bittersweet, as I don’t get my next box until Thursday, & I can’t hardly wait! I must say that becoming a CSA shareholder at Suzie’s Organic Farm is one of the best things I have ever done! I encourage you all to support a local CSA near you, if you can! Thanks to my dear friend Andi, for encouraging me!
I am...

Vegan Hot & Sour Cabbage Soup
One thing I hear most from people who join a CSA is that it opens them up to ingredients they wouldn’t normally buy or use, & sometimes that is how they find their new favorite recipe! Cabbage is something that I rarely buy, & simply because I really wouldn’t know what to do with it other than coleslaw (ick!). So, when I discovered not one, but two heads of cabbage in my CSA...

Lunchtime!
I am already really loving this CSA situation! I spent hours last night scouring cookbooks & magazines looking for recipes to utilize all my lovely veggies. I have a lot of dishes planned, so stay tuned! It looks like I’ll be spending the majority of my weekend in the kitchen - which is fine by me!
This has been the best day of my spring break so far! It’s a gorgeous day! Woke up...

My Very First CSA Pick-up!
A few months ago, my friend Andi & her husband Kevin joined a “CSA” (Community Supported Agriculture). CSAs are a fantastic way to buy local, seasonal food directly from farmers. They raved about how wonderful it was, & said that arriving home to a delivery from their CSA was like opening presents on Christmas morning - you are never quite sure what you are going to get, but it...

The Great Protein Debate!
It seems like every time the subject of a vegan/veggie diet comes up, the number one question most asked is: “How do you get enough protein?”, and the first question from people considering a vegan/vegetarian diet is “How will I get enough protein?”
The Myth of Protein is so widely accepted as fact & it goes a little somethin’ like this:
1. Protein is the...

Easter Brunch!
Sorry for the delay on this post! Been busy, busy, but fortunately I am on my Spring Break, so I have time to sit down & catch up. It was a very different Easter - very strange Southern Cali weather, 30 mile an hour winds at our Julian house, multiple earthquakes & not as much family as we normally have celebrating with us. However it was still lovely, with lots of good food...

Broccoli Polenta Squares
I love polenta, but have never attempted to prepare it myself. A few weeks ago, while browsing the aisles at Henry’s, I came across a package of Bob’s Red Mill Polenta! Excitedly I bought it, & but then it sadly sat on the shelf of my pantry. The other night while thumbing through Veganomicon, I discovered this recipe for “Broccoli Polenta.” Lucky for me, I had just...
