First things first:

Renewal...
For me, 2010 was a year of transformation, healing, evolving & growing.
Change.
That seems to be the theme of my life over the past few years. Always lots of change! Not always foreseen, not always easy, but change is inevitable, as they say, so when it knocks on our door (& it will!) we must to learn to welcome it. However hard it may be to accept the changes that may come, there can...

Crookneck Squash & Carrot Soup
I’m down to the last few bits of my most recent CSA share - just some beets (which I will roast & have on my salad for tomorrow’s lunch), crookneck squash & carrots. Hmmmm…what to do?
It’s been a windy, rainy & cold day here in San Diego & I absolutely love it! It finally feels a little like a season & this weather calls for a comforting pot of soup on...

Tofu Sammie!
I’m definitely putting my leftover baked tofu goodness to use! I loooove a tofu sammie & usually opt to go out for my absolute favorite “Tofu Club” from Extraordinary Desserts, or the “Tofu 1 on Fresh Baked Focaccia” from Influx Cafe. But I’m home bound today trying to get the last of my Xmas wrapping, & house cleaning done, as I do not have another day...

Baked Tofu with Garlic Chard
I absolutely love baked tofu on everything from salads to sammies! I am usually lazy & opt for the pre-packed stuff from Trader Joe’s, but tonight I wanted to try my hand at making it myself! After browsing a few different recipes, here is what I came up with:
Baked Tofu
1 pkg firm tofu
1/3 cup soy sauce
3 cloves garlic, minced
1 tsp paprika
1/2 tsp ground cumin
juice of 1/2...

Braising Greens
I received a huge bag of “braising greens” from the CSA, which typically consists of: kale, mustard, chard, tatsoi, & mizuna. Greens are the most nutritious vegetables out there, as they are filled with vitamins C, B6, B1, B2, E, plus manganese, copper, iron, & calcium!
I know, I know…a big plate of greens might sound boring to some, but trust me — I can assure...

Rose Wine Pub
My girlfriends & I have serious love affairs with wine! It’s hard to find a good wine bar with atmosphere & style, but the “Rose Wine Pub on 30th”, in the South Park Neighborhood of San Diego, is the kind of place I’ve been dreaming of!
This is my new favorite place! We checked it out last night & had a blast! Tons of character & charm, great wine list...

Stinging Nettle....
I picked up my CSA box yesterday & while I was unloading the contents into my BAGGU bags, I swore something bit me! “OUCH,” I exclaimed!!! Then, the guy at the farm stand said, “Oh, watch out for the stinging nettle!”
Huh? I’ve heard of stinging nettle, but didn’t realize they are edible! It turns out they are & really good for you, too! Stinging...

Kabocha Squash & Spinach Soup
Gorgeous “kabocha squash,” a Japanese variety of winter squash, is everywhere lately! I received one in my last CSA share & was excited to finally try it. It had a long day at work wanted a simple recipe I could whip up quickly. Soup always hits the spot when there is a chill in the air!
Here is a quick & easy recipe from Whole Foods Market. I substituted the dairy with...

Israeli Couscous, Celery & Pomegranate Salad
Another lovely dish inspired by 101 Cookbooks! The original recipe called for bulgar & walnuts, but I substituted with what I had on hand - Israeli couscous & pecans. Otherwise I followed the recipe to the letter! Very crunchy, tangy & tasty!
